The New Rice Season is Here! How We Mill 30kg of Rice in Japan
It’s officially new-crop rice (Shinmai) season here in Japan for 2026!
Every year, I buy fresh rice directly from a local farmer. This year, I got a 30kg bag for 10,000 yen.
People usually say it’s best to polish (mill) your rice in small batches right before eating to keep it fresh. But honestly? We’re a bit lazy at my house, so we just mill all 30kg at once!
These days, perfectly polished white rice fills the supermarket shelves, so it feels like coin-operated rice milling machines are becoming harder to find.
Here’s how easy it is to use one:
1. Insert a 100-yen coin. (It costs 100 yen per 10kg!)

2. Pour the unpolished brown rice into the hopper.

3. Select your preferred polishing level (Butsuki).
Higher percentage = Whiter, smoother, and easier to eat.
Lower percentage = Closer to brown rice, higher in nutrients.
In our house, we like to mix 50% polished (5-butsuki) and 70% polished (7-butsuki)!

4. Wait a few minutes as the machine does its magic.

5. Step on the foot pedal to drop the freshly polished rice into your bag.

Can you tell the difference between store-bought white rice and 50% polished (5-butsuki) rice?

The 5-butsuki rice is slightly brownish because a thin layer of the rice bran (Nuka) is still left on the grain.
Compared to rice in other countries, Japanese rice grains are plump, sweet, and packed with flavor. Having lived in Australia and traveled to many countries, I’ve tried all kinds of “rice,” but Japanese rice is still #1 in my heart.
If you ever have the chance to visit Japan or try authentic Japanese rice, please give it a taste!
